Saying hello to a new rescue dog – Goldie – an American Staffordshire Terrier/Pointer mix – so grateful to be free of a kennel in which she spent her entire 6 years….free at last!

We are so excited to have a new member of the family – we found her in a crate ( too small for her) at Pet Smart a few Sundays ago – and a more grateful intelligent dog we have yet to have! Our trainer tells us that this breed is the most intelligent of all breeds he trains – like a 4 year old child. She had spent all of her 6 years in a kennel – and when she saw our farm – she was overwhelmed. She caught on to all the house rules and has bonded closely with both my husband ( more him than me – she is a girl after all) and is already beloved by all of us. Rescuing dogs is so gratifying for us and for them too – I hope you all consider it next time you think of adding a new one to your home.

And finally in California it is cooling down – just a little – time for great recipes!

It has been a very long summer and I look longingly at my fall and winter clothes. Thank goodness I can wear some of them now! East coast travel is looking like lots of fun!

Spent a few days in Charleston – what fabulous restaurants and fun for a girlfriends weekend!

And now back to reality – some super easy slow cooker dinners – enjoy!

Slow Cooker Stew of Chicken

3 lb bone-in, skinless chicken thighs

Chicken thighs raw skinless

 

 

 

2 tsp cumin
1 tsp salt
1/4 tsp black pepper
2 Tbsp olive oil
1 tsp smoked paprika
1 cup chicken broth
1/2 cup salsa
2 tsp minced garlic
6 medium sweet potatoes, peeled and cut into chunks
2 (15-oz) cans black beans, rinsed and drained
1/2 (12-oz) jar roasted red bell peppers, cut into thin strips
1/2 cup chopped cilantro
Tortilla chips, rice, and lime wedges, for garnish

Directions:
1. Sprinkle chicken with 1 tsp cumin, 1/2 tsp salt, and 1/8 tsp black pepper. In a skillet, brown chicken in oil for about 10 minutes.

2. Remove chicken to a platter. In a small bowl, stir together paprika, broth, salsa, garlic, 1 tsp cumin, 1/2 tsp salt, and 1/8 tsp pepper.

3. Line a large slow cooker with potatoes. Place chicken on top of potatoes. Cover with beans and top with broth mixture. Cover and cook for 4 hours on high or 8 hours on low.

4. Stir in bell peppers.

5. Leave to heat through for about 30 minutes.

6. Place chicken on platter and spoon potatoes and sauce over it. Sprinkle with cilantro. Add garnishes.

My sister and I agreed to do a little dance and act for Natasha ( her granddaughter and my grand niece)  – and here it is. It was a big celebration – we are at the age that embarrassment is irrelevant – joy and health are all that matter! And we had tons of joy that night and were both healthy and happy! It was REALLY Fun!

Great times with family from all over the world and also with great friends

Good friends are as important and beloved family. And we are blessed to have both. We had an amazing vacation with another couple – lots of great food, wine and amazing vistas. Not crazy about the jet lag but the first few weeks were with family and that was also incredible. Here are some of the photos of times spent with London, Basel and LA family in Evian, Basel and on the road. Lucky us!

First Evian France – yes the same place where the water comes from and it DOES taste different and better than water everywhere else. It comes out of the faucet in certain places and is treated like a precious resource ( as water is now in California) with not a drop to be wasted.

Great new chicken recipe for the slow cooker – here it is!

Paprika Chicken in the Slow Cooker

Ingredients

  • 1 red bell pepper, cored, seeded and sliced
  • 1 yellow bell pepper, cored, seeded and sliced
  • 1 onion, sliced
  • 1 (28 oz.) can whole plum tomatoes, drained and coarsely chopped, with 1/2 cup juice reserved
  • 1 cup chicken broth
  • 1 clove garlic, minced
  • 1 1/2 tsp Hungarian paprika
  • 1 tablespoon
  • 1 (3 lb.) chicken, quartered and skinned or chicken pieces boned and skinned ( we prefer the latter but the downside is that the chicken can get tough when off the bone )
  • 1 tablespoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/3 cup low fat sour cream

Preparation

  1. Place peppers, onion, tomatoes, juice, 1/2 cup chicken broth, garlic and paprika in a slow cooker.
  2. In a large skillet, heat 1 Tbsp. oil over medium high heat. Season chicken with salt and pepper.
  3. Add to skillet and brown all sides, about 8 minutes.
  4. Transfer to slow cooker.
  5. Pour remaining 1/2 cup broth in skillet; scrape bottom of pan to incorporate browned bits.
  6. Pour liquid into slow cooker and cook on high setting for 6 hours.
  7. Remove chicken and let cool. Remove meat from bones and return to slow cooker; discard bones. Stir in sour cream.
  8. Serve with rice ( one option is to mix rice with quinoa – really delicious!)chicken-paprika-casserole slow cooker

Pineapple guavas are an unusual fruit which we love – and its aromatic flesh and skin make a wonderful marmalade.

We grow our own bananas – and make banana bread. I have also adapted the recipe for banana bread to make papaya bread, and persimmon bread and banana date bread and more – and we do not like nuts in any of them!

Here is a picture of our bananas! They are ripening as we speak! Organic, sweet and fresh off the tree! WOW!

Last month when our grandson Jack came to visit I found him in the kitchen reading my Wall Street Journal. I asked him he if would like me to get it for him? He was very enthusiastic. And so here he is. Amazing…..he taught himself to read at 3-4 years old….so I am not surprised….

The Larraine Segil Scholars – LSS – my passion to mentor and support the next generation of women leaders

As some of you may know, some years ago I set up endowment funds – and am so proud of the young women who are benefiting from them. They call themselves the Larraine Segil Scholars. We will be creating a dedicated website to the group soon and will link from this site.

The Larraine Segil Scholars ( LSS) are appointed from candidates at Southwestern University School of Law and The Pepperdine Graziadio School of Business, Presidential Key Executive MBA Program both in Los Angeles, and The Kingsmead College for Girls in Johannesburg South Africa. I attended and graduated from all three institutions.

The criteria for choosing the scholars are:
1. Women who walk the road less traveled
2. Women who are square pegs in round holes
3. Women of integrity
4. Women who are good students but do not have to be the top of the class                            5. Women who have an interest in strategic collaboration, alliances and partnering – on which I have written 6 books and spoken all over the world to companies, executives and governments.                                                                                                                                          6. Women who are prepared to be mentored by me for the rest of my life and willing to mentor each other and those who come after them in this group for the rest of their lives

I have an extensive network and credibility and am making that available to these very special women whom I have chosen. They will in addition receive a small financial scholarship – small compared in value to the mentoring they will receive. The group will continue in perpetuity – and creates its own leadership so that the LSS are not dependent on me for their sustainability.We are changing lives for the better – one by one. These women are already leaders – and will be the future generations of leaders enabling others to excel at the same time as paying it forward to others.

Two new winners have just been selected. They are Leila Curic and Jacqueline McCauley – both are MBA PKE candidates at Pepperdine.

She was responsible for building and growing relationships with large enterprise customers. She advised large enterprises on how to leverage technology to meet business demands. Before joining Microsoft, Leila owned her own system integration and advisory business with focus on mid-market. Leila has strong working experience in financial services, healthcare, construction, logistics and retail sectors. She started her career as a software developer and moved through engineering, networking and management roles. Jacqueline McCauley

Entrepreneur

Jacqueline is a successful entrepreneur based out of Colorado. Her career began in finance within the non-profit sector then moved into the telecommunication industry. As one of three executives, she assisted in the launch of a successful startup called GoLive! Mobile, a mobile content provider and an Inc. 500 winner – #1 in Media and #47 overall in 2011. She then helped facilitate another startup from inception, AirPush Inc., a mobile advertising platform provider where she held the position for the last four years as vice president of finance. AirPush ranked #2 in the 2014 Forbes list of “Most Promising Companies” among many other awards. Navigating the waters of outsourcing to India and the Philippines, she has more than 9 years of experience working virtually across the globe including overseeing the acquisition of a Pvt. Ltd out of India. She recently launched her own organization, Cubed Communications, assisting small businesses and entrepreneurs in the area of outsourcing, HR, Finance, & IT. She earned her Bachelors of Science degree in Business and Entrepreneurship while raising her six children as a single mom. She loves practicing yoga and scuba diving.

Leila and Jacqueline join the other 8 amazing young women who are already part of the group. And within the next few months we will be welcoming our 10th grade South African High School Scholar who will win not only the financial award but also a trip to Los Angeles to meet the other LSS women and visit their businesses and both universities,  when she matriculates in three years time.  Since between 2 and 4 new scholars join the US group every year, she will have many hosts and mentors including myself. Lucky girl!

What is making me very happy is that this program is inspiring others to do the same – a professor at Columbia University who is mentoring women is planning to create a similar program after we spoke, as is another woman philanthropist in Los Angeles – what could be better than that!

Recipes for Ice Cream Cake – Carol’s best dessert – yum!

My good friend Carol makes a divine ice cream cake. It takes time which is the only little problem -but it is divine – and so – it is worth it! Enjoy!

Carol’s Ice Cream Cake

Ingredients:

  • Oreo’s with cream inside – 4 boxes
  • 1/4 lb of butter – softened to the point of liquidity
  • Ice cream of any flavor – three kinds – a quart of each kind
  • An aluminum baking pan ( rectangle)

Directions:

  1. Put four packets of Oreos into the blender plus butter liquified and mix
  2. Pour into deep four inch aluminum foil baking pan – press into pan and up the sides – Freeze the mixture.
  3. Then spread the first layer of ice cream and freeze again.
  4. Then add more crumbled cookies/butter and freeze again
  5. Then add more ice cream ( different flavor) and sprinkle the crust onto it again and freeze
  6. Then add one more layer ( different kind) of ice cream and freeze
  7. Then turn the aluminum pan upside down just before serving and peel off the pan and serve immediately

There is nothing like the love of a dog for a child or a child for a dog

A very good friend of mine sent me this. Her 4 year old granddaughter – who still naps in the afternoon – was away with her parents for a few days – and her puppy ( about the same age in doggy years – a large dog) missed her so much that when her parents came to see if she was asleep taking her afternoon nap – this is what they found. If possible, all children should be raised with pets – it teaches unconditional love in both directions. A great side dish for all seasons – but especially when cherry tomatoes and asparagus are plentiful

I love cherry tomatoes and this dish combines them with asparagus. Very good and fairly low calorie too! The kids were not crazy about it – but the adults loved it!

Ingredients

  • 1 pound asparagus, trimmed
  • 2 teaspoons extra-virgin olive oil
  • 1 1/2 cups halved grape tomatoes
  • 1/2 teaspoon minced fresh garlic
  • 2 tablespoons balsamic vinegar
  • 1/4 teaspoon salt
  • 3 tablespoons crumbled goat cheese ( we make our own – if you want a lower calorie version as I did – I left off the cheese and it was still wonderful)
  • 1/2 teaspoon black pepper

Preparation

  1. Cook asparagus in boiling water 2 minutes or until crisp-tender. Drain.
  2. Heat olive oil in a large skillet over medium-high heat. Add tomatoes and garlic; cook 5 minutes. Stir in vinegar; cook 3 minutes. Stir in salt. Arrange asparagus on a platter; top with tomato mixture. Sprinkle with cheese and pepper.
  3. Alternate recipe – which is what I did since I had run out of time and had a ton of other things to do before dinner – I threw everything into the pan – the tomatoes, the vinegar, the garlic ( I added some sliced onion as well as chopped chives as I had some in the fridge as we love those roasted too) and the salt and pepper. Put it into the oven and it was divine!

Making Dulce De Leche Cheesecake – yum! HIGH calorie but SOOO good!

Dulce De Leche Cheesecake 2015This was absolutely delicious. Truly amazing. SOOO many calories ( about 450 a slice) but so worth it. For a special occasion to be sure. I used Keebler’s ready made Shortbread Pie Crust. Short cut to be sure – and their recipe as well which I got from the internet – from their site – and made a number of changes. YUM!

Dulce De Leche Cheesecake

Ingredients:

  • 1/2 cup whipping cream
  • 1/2 cup firmly packed dark brown sugar
  • 1/4 cup sweetened condensed milk
  • 12 ounces cream cheese, softened* ( I used my own home made ricotta – whole milk but coarse compared to cream cheese – you could also use LOW FAT cream cheese – I tried that too and it came out fine)
  • 1/2 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 tablespoon whipping cream or milk
  • 1 teaspoon vanilla
  • 1/2 teaspoon grated lemon peel
  • 1 egg
  • Keebler® Ready Crust® Shortbread Pie Crust

Directions

  1. In heavy small saucepan combine 1/2 cup cream and brown sugar. Cook and stir over medium heat until sugar dissolves. Bring to moderate, steady boil. Boil, uncovered, about 5 minutes or until mixture is reduced to 1/2 cup, stirring occasionally. Stir in sweetened condensed milk. (CHANGE FROM THE RECIPE ON THE KEEBLER SITE: I added the WHOLE can of sweetened condensed milk – since I didnt know what to do with it and reckoned it could not be bad to have more caramel sauce).I then cooked the whole mixture until the sweetened condensed milk became browner. I then FROZE most of the caramel and  refrigerated just enough to use on this pie. That worked fine! I actually froze the whole pie since we didn’t want it all – and used it a couple days later (defrosted it in an oven that I had used for baking and so was still a bit warm, with the frozen sauce on the side which also warmed up.) It was amazing!2. In small mixing bowl beat cream cheese, granulated sugar and flour on medium speed of electric mixer until fluffy. Add 1 tablespoon cream, vanilla and peel. Beat until combined. Add egg, beating until just combined.

    3. Pour into crust. Place on baking sheet. Drizzle with half of brown sugar mixture. Gently swirl with knife. Bake at 350º F for 30 to 35 minutes or until center is almost set. Cool on wire rack for 1 hour. Refrigerate at least 4 hours.

    4. Before serving, in small saucepan cook and stir remaining brown sugar mixture over low heat until warm. Cut cheesecake into wedges. Drizzle with warm brown sugar mixture.

    YIELD: 8 servings

    *NOTE: Soften cream cheese in microwave at high for 15 to 20 seconds.

Baking with my grandsons – we made a Rainbow Cake – from a Betty Crocker Recipe ( take you back a few years?)

My middle grandson Jonah loves baking. So that is what we do when he comes to visit. This cake – although a Christmas one – took his fancy and so we made it! We found the recipe on the Betty Crocker site.

Spending time with grandkids – nothing better in the whole wide world!

This week for the first time our youngest grandsons – three year old twins – came to sleepover. What a thrill for all of us! I hid little presents all over and presented them at opportune times – on arrival – at bed time – when waking up this morning after sleeping the whole night and so on. They have been exemplary!
