Pasta can be eaten as a main course or an accompaniment – there are so many different kinds – indeed entire cookbooks are devoted to the topic. I will share some of my absolute favorite recipes. I have a particular preference for Risotto – which Lele, Franca and Mimma – the three grandmothers in Tuscany that I wrote a little cookbooks about on my site under Cookbooks – created in me. Their way of making it was so easy and delicious -as well as versatile. Pasta is an inexpensive dish augmented by the freshest of ingredients.
