Background
We eat salads all year. As children need to eat their veggies, making a salad with your kids is good way to encourage them to eat greens. This recipe serves 4-6.
My grandsons decided to have a snack while watching Grandma assemble all the ingredients!
Preparation time:10 minutes
Ingredients
Crumbled feta cheese (I make my own) 2 cups
6 cups of mixed greens
1/4 cup raisins
1 cup of baby tomatoes
Juice of one lemon
1/4 cup of olive oil
2 Tbsp of rice vinegar
Directions
Have the child run water over the mixed greens in a colander and then sprinkle them onto paper towels and cover lightly with another few paper towels and pat dry. If you have a Salad spinner kids love that and can place the greens in and turn to spin dry!
The child can place the greens into a salad bowl and place the tomatoes around the sides.
He or she can then sprinkle the cheese all over the top of the salad and finally top with the raisins
When it is time to serve, mix the lemon juice, oil and vinegar in a separate bowl and season with salt and pepper. Adjust the amount of oil, vinegar and lemon juice to taste.
Dribble the dressing over the salad and toss when everyone is seated and ready to eat. Older children 5 and up, can learn to toss a salad and serve even if it gets a bit messy. Just seeing their smiling faces is worth the cleanup. It makes them soooo proud! Grandma too!
