Tuesday Tips – No Video Blog today I have such a BIG Cold and The SNEEZES!

Hi there – no video blog today – my nose is blocked , my eyes are streaming and it is not a pretty sight. However – I LOVE to cook so would not miss a chance to share some cooking tips with you to do with children.

First some great news – I am writing a cookbook of Things to Cook with Kids – like my favorite, peach pie, soups, salads, all sort of yummy recipes also using my slow cooker – a great way to have children help in a safe way.

But back to my Tuesday tips, here are 5 quick ones ( forgive the brevity – having a cold has me down but not out…..). Did you know:

1. Putting lemon juice onto bananas or apples once they have been sliced will prevent them from going a horrible brown color?

2. Spraying PAM or Canola/Olive oil spray on your frying pan will enable you to reduce the calories in that dish by about 200 when making scrambled eggs?

3. About those eggs – cooking them VERY slowly on a low heat will make them fluffy and creamier – takes time and patience however….most of us have too little of that.

4. Children LOVE cracking eggs – its messy and the shell gets into it – but its such fun to watch them do it and to teach them how to be gentle

5. Making cake from a box is a simple way to help children start to cook independently – except for turning on the stove and handling the hot pans, a 5 year old who can read, can do it all himself. Our four year old grandson can read – and so he reads the instructions to me. I believe in short cuts don’t you?

My son sent me this picture this morning – and said – the twins are twinning. I didnt know what he meant until I looked at it – yep- this is twining. We need to paint a toenail or we will not know who is who!  How much fun this is going to be as they grow! It is already fun for RockinGrandmaMusic!

The Fireman Story – is it true? I don’t know – but it surely moves the heart – so let’s believe it IS true and pay it forward…

I don’t know if this is true – but it surely is a lovely story. I hope it is true – to believe in the goodness of people – and the love of children everywhere.
 

In Phoenix , Arizona , a 26-year-old mother stared down at her 6 year old son, who was dying of terminal leukemia.

Although her heart was filled with sadness, she also had a strong feeling of determination.
Like any parent, she wanted her son to grow up and fulfill all his dreams. Now that was no longer possible.

The leukemia would see to that. But she still wanted her son’s dream to come true.

She took her son’s hand and asked,
‘Billy, did you ever think about
What you wanted to be once you grew up ?
Did you ever dream and wish what you would do with your life ?’

Mommy, ‘I always wanted to be a fireman when I grew up.’

Mom smiled back and said, ‘Let’s see if we can make your wish come true.’

Later that day she went to her local fire Department in Phoenix , Arizona , where she met Fireman Bob, who had a heart as big as Phoenix .

She explained her son’s final wish and
Asked if it might be possible
To give her 6 year-old son a ride around the block on a fire engine.

Fireman Bob said, ‘Look, we can do better than that. If you’ll have your son ready at seven o’clock Wednesday morning, we’ll make him an honorary Fireman for the whole day. He can come down to the fire station, eat with us, go out on all the fire calls, the whole nine yards !

And if you’ll give us his sizes, we’ll get a real fire uniform for him, with a real fire hat – not a toy – one with the emblem of the Phoenix Fire Department on it, a yellow slicker like we wear and rubber boots.’

‘They’re all manufactured right here in Phoenix , so we can get them fast.’

Three days later Fireman Bob picked up Billy,
Dressed him in his uniform and escorted him from his hospital bed to the waiting hook and ladder truck.

Billy got to sit on the back of the truck and help steer it back to the fire station. He was in heaven.

There were three fire calls in Phoenix that day and Billy got to go out on all three calls.

He rode in the different fire engines, the Paramedic’s’ van, and even the
Fire chief’s car. He was also videotaped for the
Local news program.

Having his dream come true,
With all the love and attention that was lavished upon him, so deeply touched Billy, that he lived three months longer than any doctor thought possible.

One night all of his vital signs began to drop dramatically and the head nurse, who believed
In the hospice concept – that no one should die alone, began to call the family members to the hospital.

Then she remembered the day Billy had spent as a Fireman, so she called the Fire Chief and
Asked if it would be possible to send a fireman in uniform to the hospital to be with Billy as he made his transition.

The chief replied, ‘We can do better than that. We’ll be there in five minutes. Will you please do me a favor ?

When you hear the sirens screaming and see the lights flashing, will you announce over the PA system that there is not a fire ?’ ‘It’s the department coming to see one of its finest members one more time. And will you open the window to his room ?’

About five minutes later a
Hook and ladder truck arrived at the hospital and extended its ladder up to Billy’s third floor open window ——–

16 fire-fighters climbed up the ladder into Billy’s room!

With his mother’s permission, they hugged him and held him and told him how much they LOVED him.

With his dying breath, Billy looked up at the fire chief and said, ‘Chief, am I really a fireman now?’

‘Billy, you are, and The Head Chief,
God, is holding your hand,’ the chief said.

With those words, Billy smiled and said, ‘I know, He’s been holding my hand all day, and the angels have been singing.’

He closed his eyes one last time.

My instructions were to send this to at least four people that I wanted God to bless and I picked you.

Amazing insights I gained today -listening to President Bush and Francis Ford Coppola

Today I have had the privilege of listening in person to the #43rd President of The US talk about vision, belief and committment with amazing brilliance,eloquence and humor and then Francis Ford Coppola who spoke about creativity. Their remarks resonated in my heart – the smaller the budget the bigger the idea Francis said – you need to be creative when budgets are small and strained – and The President said that Entrepreneurship is the creator of 70% of all jobs – we must unleash that in ourselves. I am so very blessed that my grandchildren have developed the ability in me to write music and books for children so as to incorporate their innocence their joy and potential and regardless of a very very VERY small budget to be able to share them with you.

The Importance of Birthdays

Our twins grandnephew and niece celebrate their first birthday this week. Here is the song that I wrote for Birthdays! Listen to THE BIRTHDAY SONG! First birthdays are so important – for the parents and siblings but not the little ones. One of the proudest moments we celebrated was when one of my son’s best friends who had children before he did, asked us if we would host their first child’s first birthday at our little farm on the west coast since their families lived there while they lived on the east coast. Of course we were so honored and delighted. And there were 100 people there including children! What fun – but makes my point that the party was for the parents and friends and grandparents – and what a celebration it was. And the pictures – oh my – we have to remember the second, third, fourth and following children and take lots of pictures of them too- the numbers of photos tend to reduce depending on the order of the arrival of children so taking enough of each is important to remember! Of course every birthday has music and dancing – especially for little kids!

Tasty Thursdays are here again! Feta Cheese Salad

Background
We eat salads all year. As children need to eat their veggies, making a salad with your kids is good way to encourage them to eat greens. This recipe serves 4-6.
My grandsons decided to have a snack while watching Grandma assemble all the ingredients!

Preparation time:10 minutes

Ingredients
Crumbled feta cheese (I make my own) 2 cups
6 cups of mixed greens
1/4 cup raisins
1 cup of baby tomatoes
Juice of one lemon
1/4 cup of olive oil
2 Tbsp of rice vinegar

Directions
Have the child run water over the mixed greens in a colander and then sprinkle them onto paper towels and cover lightly with another few paper towels and pat dry. If you have a Salad spinner kids love that and can place the greens in and turn to spin dry!
The child can place the greens into a salad bowl and place the tomatoes around the sides.
He or she can then sprinkle the cheese all over the top of the salad and finally top with the raisins
When it is time to serve, mix the lemon juice, oil and vinegar in a separate bowl and season with salt and pepper. Adjust the amount of oil, vinegar and lemon juice to taste.
Dribble the dressing over the salad and toss when everyone is seated and ready to eat. Older children 5 and up, can learn to toss a salad and serve even if it gets a bit messy. Just seeing their smiling faces is worth the cleanup. It makes them soooo proud! Grandma too!

Cooking with kids – just the best – messy but SOOO much fun!

Here is  Jonah my second grandson, helping me cook. We are making a mixture of mixed potatoes – yams, sweet potatoes, yukon gold -with Lawry’s salt and olive oil, fresh chopped rosemary – baked for 1.5 hours in an oven at 350 degrees. YUMMY! Jonah held my hand while I cut the potatoes, then helped me rinse them by mixing them in a bowl with water and clean hands, then he placed each one into the cold pan into which I had put some oil. Then he sprinkled the rosemary which I had chopped all over them, along with the salt! HOW PROUD HE WAS!! And he consumed about 10 baby carrots as his snack while doing it. Excellent choice Jonah!

OUR TWIN GRANDBABIES ARE HERE!

We are so very excited – our newest grandchildren arrived safely – and are just perfect. Here they are – Noah and Gabriel – 5 lbs and 5 lbs 2 ounces – I could not be happier. Kudos to their mommy who was on bed-rest for over 2 months and their daddy who took care of her while running his business and taking care of Jack, 4 and Jonah 2.

Jack loved meeting his babies for the first time – Jonah decided that he would stay in hospital with his mommy and that the babies had to go ‘home to find their mommy’ . Hmmm. To be expected!

How blessed we are. You can see how happy Rockin Grandma Music is!

Tasty Thursdays! Here is the latest recipe – Roasted Rack of Lamb Rib Chops with Tomato Rice and Mint Sauce

Background:
Costco has wonderful lamb rib chops – and they are so easy to cook.  I buy them and freeze them for special occasions. It was my husband’s birthday so I decided we deserved a special dinner! And since I was with the little ones all day – I didn’t have a lot of time – you will LOVE how fast this comes together. And you should grow your own rosemary – if you have the smallest garden the rosemary plant will bloom – or you could grow it indoors in a pot. It flowers, and smells divine when crushed. And adds to any lamb dish. Also grow your own mint – it grows like a weed and also can be grown in a pot indoors.

Preparation Time: 10 minutes

Cooking Time: 20 minutes per lb

Ingredients:

1 rack of lamb rib chops

Fresh Rosemary 1 large sprig

Garlic chopped ( fresh or bottled)

Salt and Pepper to taste ( I used a combination Lemon Pepper with salt – NO MSG of course)

Olive oil spray  or 2 Tbsp

The Rice:

Basmati Rice I cup per 2 people

Three large fresh tomatoes

Salt and Pepper to taste

 Mint Sauce:

Vinegar (about 1/2 Cup- I use Rice Vinegar)

Sugar or Sugar Substitute

Fresh Mint I large sprig

Directions:

  1. Heat the oven to 425 degrees.
  2. Poke small holes into the lamb and squeeze chopped garlic and rosemary leaves ( green part only ) into the holes.
  3. Salt and pepper all over generously
  4. Add the Olive oil spray  (or one Tbsp of oil)to a flat pan with sides that come up ( ie dont use a baking pan that is flat as the drippings will leak onto the oven base.
  5. Place the lamb onto the pan and cook for 20 minutes a lb
  6. In the meantime fry some basmati raw rice in a Tbsp of olive oil for a minute or two, add three chopped tomatoes and salt and pepper to taste
  7. Add the amount of water appropriate (check rice box instructions) for the amount of rice ( or you could add chicken stock for an even richer taste – your choice) and allow to come to a boil then reduce heat and simmer until liquid has disappeared.
  8. While both are cooking, chop the mint, add enough vinegar so that the mint is floating, add sugar to taste ( or substitute) and serve the mint sauce with the lamb as a side offering.
  9. When the meat juices run clear when poked with a fork, your lamb is ready! Serve with the rice and a great green salad.

Making Fun out of Chores

Although I wrote my children’s stories and music to entertain, I have found that using Sam, The Broken Robot as a mommy’s helper is a great way to facilitate the grandchildren to do their chores. Four and two is rather young, you may say, to have chores, but the kids actually LOVE doing them at this age. Jack who is four, and Jonah who is two, both make their beds. Is it hospital perfect? No – but they are getting better every day. Pulling up the sheets and covers and straightening the toys and pillows is about as good as it gets and the way I get them to do it is to say: SAM SAYS MAKE YOUR BEDS! And off they go. Then I pretend to be SAM The Broken Robot, and give them high fives all over the room. The same approach works for putting diapers in the pail, clothes in the wash, toys in the box and cleaning teeth. And they are two proud little boys when they do help. Do your children do chores and if so how do you encourage them to do them?

Dealing with ‘Mean Kids’ – how soon do your children need to know?

“How do you teach your children to react when dealing with kids who are mean?”

I put this question out to multiple mommy-bloggers and received some interesting answers. Some said – don’t talk to young children about mean kids as they will become judgmental. Others said – 2 is too young 5 may be ok. One man said he had been a mean kid and was just calling out to be loved. Yet another said that love and compassion could solve all. And another person said ‘pick up your child and take them away’.

All of the above are right. However the reality is that children do need coping strategies of their own when parents are not there. This is what we tried and it seems to be working. 

“Try being really nice to a child who is being mean to you. And if that doesn’t work, walk away and find someone else to play with”.

Making cookies can be exercise and a lesson in organization and neatness for little ones!

I made peanut butter cookies today with my grandchildren – a great way to build coordination and hand strength as well as organizational capability – they had to pull the stiff dough into balls, then roll them in sugar and place them equidistantly on pans – and then of course eat them! We had such fun and they presented them to their parents later with great pride. I personally had to get those cookies out of the house or would have consumed them all – I will share the recipe on TASTY THURSDAYS weekly when I will post a different recipe each week to cook with /or without your little ones!

Here is the Beef Curry Recipe I made yesterday – easy Slow Cooker style!

Beef Curry in the Slow Cooker

Background: I just love my slow cooker – truly, it is the easiest way to cook delicious food while you are doing other things and it makes the whole house smell divine. My daughter-in-law doesn’t normally eat meat but since being pregnant with twins, she loves it! Enjoy!

Preparation Time: 30 minutes

Cooking Time: 6 hours

Ingredients:

2 lbs of Stewing Beef

2 Large Onions chopped

4 Tbsp Oil ( Olive or Canola)

1 Tbsp of crushed/chopped garlic

2 Tbsp of Curry Powder

2 Tbps of Ginger (minced)

1/2 Cup of Flour

20 ounces of Tomatoes stewed in puree or chopped tomatoes ( canned are fine)

Salt and Pepper to taste

Directions:

  1. Heat the oil in a frying pan.
  2. Take the pieces of stewing beef and add salt and pepper to taste.
  3. Dredge them with flour ( put the flour into a saucer, and roll the pieces until they are well coated).
  4. Then roll them in the curry powder.
  5. Add the pieces a few at a time into the heated oil – NOT touching each other – – and brown lightly on all sides. Remove from the pan and put into the slow cooker – still turned off until you have done all of them
  6. Add the garlic to the oil and pieces of crusty flour left in the frying pan and saute just for a few minutes. Remove and add to the meat in the slow cooker
  7. Add the chopped onions to the pan and saute until translucent and soft.  You may need to add a little more oil.
  8. Add the tomatoes and puree to the pan and bring to a boil.
  9. Then pour the whole mixture over the meat and garlic in the slow cooker, turn it to high, cover the cooker and set it to cook for 5-6 hours
  10. Cook up some basmati rice  as follows:
  11. Saute the raw rice in a pan with a little olive oil and salt – then add two cups of water to one cup of rice and bring to a boil – reduce to a simmer and let it cook until tender. If you need to add more water, do so until the rice is cooked to your satisfaction ( not too raw not too mushy).
  12. Create a wonderful salad ( see our Salad page for recipes).
  13. Serve with Chutney – Mrs. Ball’s Chutney is best and my favorite is Mango Chutney! I also make my own chutney – and will share that recipe with you on another post.
  14. Enjoy! And put the leftovers in the fridge – they are even better heated up the next day!
  15. BTW the way we used to serve curry in South Africa where I was raised, was with sliced bananas ( with lemon juice on them so as to retain their lovely white color) as well as chopped onion and tomatoes and sprinkles of coconut flakes as well as chutney. Even raisins are fun to add – or plain non fat non sweetened yoghurt.

One day in the life of an active Grandma

I wrote this to my sister yesterday when she asked me how things were going? My daughter-in-law is on full bedrest as we await the arrival of identical twins and I am so thrilled and blessed that she has asked me to help her ( and her Mom) with her life while she has to stay in bed. She is a highly competent mom, a pediatrician, an athlete and gorgeous too – I adore her. Here is what I wrote my sister – and friends – and they convinced me to share it with you! So here goes – unedited – a day in the life of a VERY active Grandma – me!

I slept over at my son and daughter – in- law’s home again last night – was up at 6.15 with the two boys this morning – change diapers, clean teeth make breakfast for them, help my son and daughter in law – get dressed pack snacks/lunches for school get change of clothes for boys and school stuff ( the little one wanted to take his Halloween things with him) into bags, jump into car, drive to school drop them off at 9, rush to Whole Foods , do major shopping, rush back to school by 10 for Mommy’s day – crawl through huts, jungle gym, go on obstacle race, play instruments, make playdough pumpkins, paint, read, have snack ie do the day that they do, rush upstairs to the other classroom to get the two year old, get both kids bags, rush ( rush is a relative term when dealing with Four and Two year olds – you moms and grandma’s out there know what I mean) to car, drive to Rubios, order lunch, deal with peepee in underwear for two year old who is being toilet trained, change his clothes, wash up, deal with temper tantrum of two year old, feed kids, fill up juice with refills, break up fight over something silly, propel kids to car, wait interminably for four year old to do up his car seat ( has to do it himself) two year old learning to do it – so help him (hands off – he wants to do it himself) drive four minutes to house – another peepee in new clothes, arrive at house, make up lunch for mommy in bed, try to put two year old to sleep, deal with screaming fit again, finally get him into diaper, and onto bed, tell story till he falls asleep, jump back into car with four year old , back to shops – Target this time to buy Halloween stuff, come home, stuff bags with Halloween treats that have to be delivered to three homes in their hood or their house will be tp’d, make more food for mommy, fill up her water and juice bottles (every hour this has to be done – she is amazing BTW – amazing – so energetic and has followed instructions to stay in bed TOTALLY – I am so very proud of her and love her more each day for how she is handling all this), make beef curry in crockpot with rice and make up salad,  two year old wakes up in bad mood crying because I didn’t cook with him, make up a salad with him so he feels I cooked with him; housekeeper has personal problem and has to leave to do something with her child, chat with mom for a bit to catch up on plans for next few days, read books to children, play ‘teach me’ on Ipad and iphone- each child wants one – stop kids from bouncing on Mom’s bed too much, make up snacks for both boys which turns into dinner because they are hungry again. Run bath for little one – make up stories to get him to do it; help older one make fruit dessert – simply cut fruit with cut up string cheese and a little mango smoothie – his recipe btw, for mommy (since he loves to cook too). Then he needs to poop – sit with him while other one is in the bath

Are you tired yet?

Then wait for my son to come home – as he comes in – I leave to get into the car to join a webinar about my new website and how to create an app for iphone/Android for it and that lasts while I drive home for two hours -traffic is awful and they are repairing the freeway everywhere just to frustrate rush hour drivers! Then come home, husband is hungry – I made him dinner before I left home but I make him more when I get here – talk with him for a while – we haven’t seen each other for a few days since I have been staying with kids….

Ready for bed – are you surprised? But no time – I have two hundred emails, want to check that orders were shipped for those wonderful folks who bought product on RockinGrandmaMusic today and also review documents for a board meeting tomorrow. Oh did I mention? Tomorrow morning I have to be up at 4 am for a board meeting in Boston that I could not physically get to – since I didn’t think it was right for me to leave the west coast this week. Am on call to go back to the kid’s house certainly will see them Saturday when I will go at 7am to pick the boys up to come to the farm ( good exercise digging and planting, picking up snails for the chickens, and cutting roses for the goats) maybe to stay for the weekend…. not sure playing it by ear.

Also have to make cheese here tomorrow – have thirty gallons of milk – and also Sapote jam- the crop ( and about 40lbs of it sitting on kitchen counter) requires it be done soon. Living on an urban farm – its fun and work too!

Would I change any of this? NOT FOR A MOMENT!! It makes me feel alive, loved and happy ( and exhausted – yes I do admit I sleep VERY soundly at night). And when you look at the two little guys holding hands ( their idea not mine) it’s all worth it isn’t it?

Chicken Slow Cooker with Yams, Lemons and Capers

Background: I made this recipe up today – and its easy and yummy too.

Preparation: 30 minutes prep time and 3-5 hours cooking time

Ingredients:

Olive oil – 2 Tbsp

Chicken – organic only; skinless, boneless breasts and thighs cut into bite sized pieces – about 4 lbs for 8 -10 people

Four Yukon Gold Potatoes

One large yam

One Large Red Onion

Six Tbsp of capers ( fresh or bottled)

Four Large Tomatoes cut into pieces

Two limes

One Lemon

2 cups of cooking wine ( red or white)

I tsp of dried or fresh tarragon

Salt and Pepper to taste ( I use a lemon pepper/salt blend – NO MSG!)

Directions:
 1. Heat the olive oil in a pan, and fry the chicken pieces until browned on all sides. When placing the pieces in the pan, do not let them touch – they will brown better that way – and yes, you will need to do a bunch of batches – and the oil splashes onto the stove top which is the only downside in this dish – but it is worth it!

2. In the meantime, peel and slice medium/thin four yukon gold potatoes, and one large yam. Place them on the bottom of your slow cooker and sprinkle your favorite salt and pepper over the top

3. Place the browned ( light browning) chicken pieces over the potatoes in the slow cooker.

4 Fry the onions in the pan where you browned the chicken pieces and saute until soft then add the cut tomatoes, capers, cooking wine and tarragon.Squeeze the lime juice into the mixture ( discard the rinds and skins).

5. Bring to a boil and pour it over the chicken potato mixture in the slow cooker.

6. Slice the lemon into thick slices and halve each slice – then place the pieces into the chicken mixture.

7. Be sure that the potatoes are well covered – if needed you could add some chicken stock if it looks dry – but remember that the tomatoes will release liquid so the liquid level may rise a bit in the slow cooker.

8. Cook on HIGH for 3 hours if you need it sooner – or on high for one hour and then on LOW for 4-5 hours.

9. Some folks like to serve rice in addition to the potatoes – I think the potatoes are enough – but it is rather nice to have rice to mop up all that lovely gravy. A green salad is a wonderful accomplishment to this ( Spinach and Mixed Greens plus a light vinaigrette mustard dressing).

We are shipping out orders today like crazy to catch up with our backlog! Still waiting for our identical twin boys to be born – hopefully this or next week. The whole family is anxious and excited too. What a miracle! I will let you know when they arrive, in the meantime I made a large slow cooker meal today for the family who are pitching in to help with our four and two year old grandsons and bedresting daughter in law and hungry hard working son!
