Peanut Butter Cookies

Background:

Since most children love peanut butter, this recipe for cookies is always a favorite. There will be lots of tasting and licking of the bowls and spoons both before and after baking – but that’s fine with me – I like to do that too! Be sure to check out my golden rules for cooking with children!

Preparation Time: 15 minutes

Cooking time: 10 minutes

Ingredients:

  • 1 1/4 cups flour

  • 3/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup butter or margarine

  • 1/2 cup peanut butter

  • 1/2 cup granulated sugar

  • 1/2 cup packed brown sugar

  • 1 egg

  • 1/2 teaspoon vanilla extract

Directions:

  1. Sift together flour, baking soda, and salt.

  2. In a mixer bowl, beat butter for 30 seconds.

  3. Add peanut butter and sugars, beating until fluffy.

  4. Add egg and vanilla, beating thoroughly.

  5. Add dry ingredients to beaten mixture and blend.

  6. Shape dough into 1 inch balls and roll in granulated sugar if desired.

  7. Place on ungreased cookie sheet and criss-cross by pressing with lines of fork.

  8. Bake at 375 degrees for about 10 minutes.

  9. Cool on wire rack. Makes 30-35 cookies.
