Background:
Making Coleslaw is a snap nowadays with shredded multicolored cabbage available in the markets all ready for you to add fixin’s and dressing. This is so delicious – it could be eaten on its own as a main course if you add more nuts for protein. It’s a great vegetarian dish too.
Preparation time: 10 minutes plus an hour for chilling

Ingredients for Salad:
1-2 bags of thinly sliced mixed cabbages – coleslaw is available like this already bagged and ready to go in most markets
1-2 bags of Oriental noodles – you could use Ramen ( there are other brands) – uncooked and crushed
2 cups of raw broccoli flourettes
1 cup of sliced almonds ( I double up on this if the salad is a main course for vegetarians and sometimes fry the nuts in Pam Spray for a few minutes to roast them first – makes them delicious)
1 cup of sunflower seeds
I cup of pine nuts ( I sometimes fry these nuts in Pam Spray for a few minutes to roast them first – makes them delicious)
6-7 Green Onions chopped
1/2 Red Onion chopped
Directions for Salad Ingredients:
Toss all Salad Ingredients except for the nuts and noodles together and chill.
Ingredients for Dressing:
1 cup of oil ( I like Olive Oil but it gives a stronger taste – you could use Canola which is lighter)
1/2 cup of White Vinegar ( white wine vinegar is an option – depends on personal taste)
1/3 cup of sugar ( again I cut this back for our taste to 1/6th cup – but that is up to you)
Ramen Noodles Flavoring Mix
Directions for Dressing:
Whisk all dressing ingredients together and chill.
Final Directions for Both:
Just before serving combine the dressing with the salad and toss very well. At the last moment add the nuts and noodles and toss just before serving. This is YUMMY!
